Main Styles of Dessert Wine
Late Harvest: Grapes stay on the vine past normal picking time to build high natural sugars.
Botrytis (Noble Rot): A beneficial fungus shrinks the grapes, leaving rich honey flavors (e.g., Sauternes).
Ice Wine: Grapes freeze on the vine; pressing them yields thick, sweet, balanced juice.
Fortified: Wine mixed with brandy to raise alcohol and stop fermentation (e.g., Port, Sherry).
